Professional Bio

With over 30 years of experience in the restaurant and hospitality industry, Tim brings deep operational expertise and a passion for mentorship to his role. He previously served as Executive Chef for a senior housing facility, where he found renewed purpose in community-focused work. His career has included stints at notable Omaha establishments, starting from his college days at places like Lazlo’s.
At Ooh De Lally (opened in 2024 at 4916 Underwood Ave.), Tim leads a mission-driven initiative that provides comprehensive culinary training, meaningful employment, and second-chance opportunities for formerly incarcerated individuals. The program partners with Metropolitan Community College’s 180 Re-entry Assistance Program (180 RAP) to reduce recidivism through education, job skills, and wraparound support. Under his leadership, the restaurant also opened a sober living home for employees, addressing housing barriers for program participants.
Inspired by the spirit of camaraderie in Disney’s Robin Hood (the source of the name “Ooh De Lally”), Tim views the restaurant as a “band of brothers” working together for positive change. He emphasizes creating a community where participants gain skills, references, and confidence to succeed in the culinary field and beyond.
Tim is committed to building community in Omaha. He is known for his collaborative approach, enthusiasm for partnerships, and dedication to turning good food into lasting impact.
